Project Description
Menu is served from November 2016 to February 2017 in buffet style  

WARM BUFFET:
  • Moroccan lamb thigh with dried fruit 120 g
  • Salmon fillet grilled on beech chip with juniper berries and gin 100 g
  • Couscous with vegetables 100 g
  • 
Roasted potatoes with rosemary and garlic 200 g
  SALADS:
  • Green salad with Caesar dressing and chicken fillet 50 g
  • Traditional potato salad 50 g
  • 
Two cabbage coleslaw with cumin and cashew nuts 50 g
  FISH DISHES:
  • Smoked salmon and avocado terrine 40 g
  • Fried Baltic herring in classic marinade 40 g
  • Devilled egg with chive cream and spiced sprat roll 30 g
  MEAT DISHES:
  • Beef tongue with beetroot and horseradish cream 40 g
  • Profiterole with duck liver paté and red onion chutney 20 g
  • Smoked chicken snack with pineapple and cucumber 25 g
  VEGETARIAN DISHES:
  • Marinated garlic pickle 40 g
  • Mushrooms marinated in white wine 30 g
  • Selection of fresh black and white bread, herb butter
